In 1994, Randy (Red) and Shiona Quick began their BBQ adventure in Maryville, Illinois. Both Randy and Shiona worked for the airline industry, which at the time, did not have the most promising future. Randy’s dream had always been to open his own barbeque restaurant and make famous his generations old barbeque recipe. After being known as the hosts with the most amongst their friends and garnering support from their family, Randy and Shiona cashed in their 401Ks and put their hearts, souls and savings into a crazy new adventure.

What began with a tri-axle trailer pulled on site for a simple carry out and small dining restaurant, soon turned into expanded dining rooms, an outdoor rock garden and domination of the corners of 159 & 162 in Maryville with the most delicious hickory smoke the town had ever encountered.

Red and Shiona become the local barbeque heroes in a short time and were well know for the quality products they consistently served to their customers. Red’z Rib Shack became the “it” barbeque joint in the metro-east area. With many faithful regulars coming in to get their fix, the word on the streets spread quickly and the Red’z Rib Shack experienced great success over the years.

After a prosperous ten years of serving up mouth watering meals, Randy and Shiona packed it in to pursue another dream. Red’z was sold to local entrepreneurs and operated for several more years with different owners until Walgreens purchased the property.

While Red’z continued under new ownership, Randy and Shiona sold it all and moved to the Caribbean island of Dominica to make a go of a new lifestyle. They were hired to bring new life to a wilderness retreat and restaurant and spent several months on the island. After a short time on Dominica, a new priority arose. Randy’s mother needed a caregiver and with family being number one for the couple, they made a return to the mainland.

Upon their homecoming, Randy and Shiona became involved in several new ventures from house flipping to “working for the man”, none of which were as a good a fit as serving their famous barbeque. After much discussion and planning, Randy and Shiona have decided to pursue a “Red’z re-do” and are anticipating just as much success this time as the first. Randy and Shiona are excited to be serving the high quality product that everyone remembers, with all the same great menu items and recipes. Red and Mrs. Red are looking forward to the opportunity to earn back their place in the community and hope to see all of you stopping by to get your fix!
